Sweet and Savory Spinach Delight
You’ll Need
1/4 whole pineapple chopped
1 avocado
1 orange bell pepper
4 handfulls spinach
1 table spoon balsamic vinegar
1 teaspoon dijon mustard
sprinkle crush red pepper flakes
Now What
Chop and combine pineapple, bell pepper, avocado & spinach
Mix dijon, balsamic and red pepper flakes in separate bowl
Combine and Mix
Enjoy!
Indian Veggie Surprise
You’ll need
1 cup mixed rice / lentils / split peas
2 sweet potatoes
1 yellow bell pepper
1 red onion
5 handfulls of spinach
2 cups chopped mushrooms
turmeric
red pepper flakes
Now What
cook rice mix
chop potatoes and soak in water for 10 minutes
chop onions. add to skillet on medium heat. little earth balance in skillet
drain potatoes. add turmeric and red pepper flakes to potatoes
add potatoes to skillet
stir mixture and cook for 10 minutes
chop and add bell pepper
chop and add mushrooms
add spinach and stir until spinach shrinks
add rice mixture and stir up
add (or skip) 1/2 cup simmer sauce
stir for 2 minutes
remove from heat and enjoy!
Heart Healthy Spinach Delight!
Serves 2 - or 1 for now and one for later!
4 big handfulls of spinach
1 red bell pepper
1 big handfull of mushrooms
1/2 cup sunflower seeds
1/2 lemon
1/2 tablespoon dijon
2 tablespoons balsamic
Now What
Cut and mix all ingredients
Mix dijon and balsamic
Mix everything and enjoy!

Savory & Spicy Mushroom Hummus Bites
You’ll Need
4 mushrooms
handful of spinach
3 table spoons of hummus
1 red bell pepper
1/2 table spoon balsamic vinegar
1/4 table spoon olive oil
2 shakes your favorite hot sauce
Now What
Slice mushrooms in horizontal pieces
Mix spinach with balsamic, olive oil, and hot sauce
Slice bell pepper
Spoon hummus on mushroom slices
add 3 or 4 spinach leaves
Top with mushroom cap
Top bites with bell pepper for garnish

Spicy Sauteed Mushroom & Kale
You’ll Need
2 stalks of kale
2 handfulls of mushrooms
1 table spoon earth balance
1/2 lemon
3 shakes your favorite hot sauce
Steamer
Now What
Break kale into manageable pieces and steam
Add earth balance to skillet over medium heat
Chop and add mushrooms to skillet
Stir while heating about 3 minutes
Add steamed kale to skillet
Stir and heat until kale and mushrooms reduce in size a bit (about 5 minutes)
Add squeezed lemon to mixture
Add hot sauce
Give it one last stir
Remove from heat, dish out and enjoy!

Lentils and wild rice
You’ll Need
1 cup lentils and rice (prepared)
1/2 jar curry
2 handfulls spinach
4 mushrooms
1 red onion
cast iron skillet
earth balance spread
Now What
In cast iron, add a bit of earth balance spread
chop and add onions
cook them onions up
add a few handfuls of spinach
stir it all up
chop and add mushrooms
stir it all up
add lentils and rice to the mixture
add curry
stir it all up
serve and enjoy!

Quinoa on the bottom
Topped with Spinach
Orange pepper slices around the base
Squeeze fresh lemon all over
