Roasted Acorn Squash Soup! Sooooo good!
Spicy Veggie Soup
Great for preventing or getting over a winter cold!
You’ll Need
1/2 red onion
3 cloves garlic
3 cups water or veggie stock
4 handfuls of your fav chopped veggies
I used sweet potato, celery, cauliflower, tomato, hot pepper
1/2 cup coconut milk
Hot sauce and spices
Now What
Chop and simmer onion and garlic in pan with a little olive oil
Add water / veggie stock
Add chopped veggies
bring to a boil, turn down, stir and simmer for 30 minutes
Add 1/2 cup coconut milk
simmer 10 minutes
stir
Enjoy blended or as is!

Savory Mushroom Spice Soup
You’ll Need
2 handfulls mushrooms
1 cup lentils / rice
1/2 red onion
2 cloves garlic
1/2 inch ginger
1/4 lemon
2 table spoons corn starch
1 table spoon red curry paste
1 table spoon hot sauce
1 teaspoon red pepper flakes
Salt and pepper
Now What
Chop everything
Sautee onion and garlic in pan with a little olive oil
Add mushrooms
Add 3 cups water
Cover and simmer for 10 minutes
Add spices + squeeze lemon + ginger
Cover and simmer for 10 minutes
Add corn starch
Cover and simmer for 10 minutes
Same time prepare rice / lentils
When soup thickens combine with lentils / rice
Stir and Enjoy!
Acorn Squash Soup
You’ll Need
Acorn Squash
1/2 red onion
2 cups water
1/2 cup coconut milk
Now What
Roast whole squash in oven for 40 minutes
Remove squash. Cut and peel of skin.
Dice onion, simmer with a little olive oil
Add squash to pot with water
Cover and simmer for 20 minutes
Add spices (red pepper flakes, sea salt, chilly powder)
Simmer for 10 minutes
Add coconut milk
Cover and simmer for 10 minutes
Vitamix the soup and enjoy!
Top with sesame seeds and dried cranberries

Roasted Tomato Pepper Soup
You’ll Need
4 Organic Tomatos
1 Red Pepper
2 cloves of garlic
1 red onion
1/4 cup of coconut milk
Now What
Toss whole tomatos, and garlic in oven to roast
Chop onion and simmer in pan with a little olive oil
Take tomatos out after 15-20 minutes
Chop tomatos and add to pan
Add garlic to pan
Chop and add red pepper to pan
Add crushed red pepper flakes
Stir, cover, and let simmer for 20 minutes
Add coconut milk
Stir, cover, and let simmer for 10 minutes
Vitamix and Enjoy!
I added acorn squash seeds I roasted up as well as a nice topping!

You’ll Need
Whatever veggies you have in your kitchen. I used
handful of kale
2 sweet potatoes (boil them up)
2 stalks celery
2 carrots
1 onion
2 cloves garlic
Now What
Chop everything up + boil potatoes
little olive oil in pan, chop and simmer onions. add garlic a few minutes later
add veggies and 2 cups water or veggie stock
If you have more veggies make sure to cover with water
add spices. I like red pepper flakes. Lots of them!
simmer down for 20 - 30 minutes
add 1/4 can coconut milk (optional makes creamier soup)
simmer down for 10 minutes
Vitamix it up and enjoy!
Can eat without blending also if you prefer a little chunkier veggies in your soup!
Creamy butternut squash soup
Home made veggie + soba noodle soup!
You’ll Need
Soba noodles
Half red onion
Few cloves of garlic
Bit of ginger
1 sweet potato
2 stalks celery
1 handful of kale
NOW WHAT
boil water / toss in soba / cook for 8 minutes / drain / set aside
chop onion and garlic
saute onion and garlic in pot w/ olive oil
chop sweet potato / add to mix
simmer for 8 minutes
add water
chop celery & kale and add to mix
add chopped ginger
simmer for 30 minutes
add noodles
Enjoy!
