Sweet and Savory Spinach Delight
You’ll Need
1/4 whole pineapple chopped
1 avocado
1 orange bell pepper
4 handfulls spinach
1 table spoon balsamic vinegar
1 teaspoon dijon mustard
sprinkle crush red pepper flakes
Now What
Chop and combine pineapple, bell pepper, avocado & spinach
Mix dijon, balsamic and red pepper flakes in separate bowl
Combine and Mix
Enjoy!
Kale Risotto
Serves 4 - yay for leftovers!
You’ll Need
1/2 cup lentils
1/2 cup wild rice
4 big handfuls of kale
1 table spoon dijon
4 shakes hot sauce
2 table spoons balsamic
1 table spoon nutritional yeast
Now What
Cook rice and lentils together. Under do them so there is a bit of water in the pot. About 15 minutes. Remove from heat.
Steam kale
Combine rice & lentils with steamed kale
Combine dijon, hot sauce & balsamic together
Pour mixture over dish
Mix well
Sprinkle nutritional yeast over top
Enjoy!
Spicy Sauteed Mushroom & Kale
You’ll Need
2 stalks of kale
2 handfulls of mushrooms
1 table spoon earth balance
1/2 lemon
3 shakes your favorite hot sauce
Steamer
Now What
Break kale into manageable pieces and steam
Add earth balance to skillet over medium heat
Chop and add mushrooms to skillet
Stir while heating about 3 minutes
Add steamed kale to skillet
Stir and heat until kale and mushrooms reduce in size a bit (about 5 minutes)
Add squeezed lemon to mixture
Add hot sauce
Give it one last stir
Remove from heat, dish out and enjoy!
Spring Spice Chopt Delight!
You’ll Need
(makes 2+ bowls / servings)
2 handfuls kale
1 apple
1 handful of cauliflower
5 mushrooms (any kind)
1 red bell pepper
1/2 lemon
1 table spoon dijon
2 table spoons balsamic
2 shakes your favorite hot sauce
Now What
Squeeze lemon juice over kale and massage until shrinks
Mix veggies in big bowl
Mix dijon balsamic and hot sauce in little bowl
Pour dijon mixture over veggies and mix

Squash soup, Candied Sweet Potato Fries & Fresh Cucumbers!
You’ll Need
1 Squash
1 onion
1 garlic clove
1 sweet potato
1 cucumber
2 stalks of celery
1 table spoon maple syrup
1 table spoon olive oil
3 cups of veggie stock
sea salt
vitamix or immersion blender
Now What
Cut up squash into 2 inch cubes
Dice up a couple stalks of celery
Dice up onion and garlic
Place diced up squash, onion, celery, and garlic on cookie sheet
Bake it up for 30 minutes on 450 degrees
Peel off skins of squash
Put everything in the blender or vitamix - including veggie stock
vitamix it up
Put everything in sauce pan and stir and simmer it up
Enjoy!
Candied Sweet Potatoes
Chop up 1 sweet potato
mix up 2 table spoons of maple syrup, 1 table spoon olive oil and some sea salt
mix up potato slices in syrup mixture
bake on cookie sheet at 450 for 30 minutes
Enjoy!
Adorn with sliced cucumbers!

French Toast with chocolate and banana :)
You’ll Need
2 bananas
almond milk
chopped chocolate
your favorite bread
Now What
Mash everything together (except the bread)
Dip bread
Cook each side in cast iron skillet
top with maple syrup or not
