Spicy Sauteed Mushroom & Kale
You’ll Need
2 stalks of kale
2 handfulls of mushrooms
1 table spoon earth balance
1/2 lemon
3 shakes your favorite hot sauce
Steamer
Now What
Break kale into manageable pieces and steam
Add earth balance to skillet over medium heat
Chop and add mushrooms to skillet
Stir while heating about 3 minutes
Add steamed kale to skillet
Stir and heat until kale and mushrooms reduce in size a bit (about 5 minutes)
Add squeezed lemon to mixture
Add hot sauce
Give it one last stir
Remove from heat, dish out and enjoy!

Spinach & Quinoa Delight!
The surprise is that this tastes amazing and will leave you feeling fantastic! And it looks like a sunburst work of art so that’s fun too.
You’ll Need
1 cup of quinoa (prepared and set aside)
2 handfuls spinach
1 orange pepper
1 lemon
Now What
Prepare quinoa
Steam spinach
Cut pepper into slices
Build your sunshine from the bottom up
Quinoa on the bottom
Topped with Spinach
Orange pepper slices around the base
Squeeze fresh lemon all over
Enjoy!

Everything Green + Chick pea Salad!
Was a total experiment but super good for you and tasting too!
STUFF YOU’LL NEED
Handful of chick peas
1/2 cucumber
1/4 onion
handful mint
1 avocado
1 lime
1 lemon
1 table spoon olive oil.
NOW
chop onion, cucumber, avocado + mint
combine with chick peas
squeeze lemon and lime over salad
add olive oil
dash of salt + pepper if you like
NOW
mix it up
eat it up!
