Indian Veggie Surprise
You’ll need
1 cup mixed rice / lentils / split peas
2 sweet potatoes
1 yellow bell pepper
1 red onion
5 handfulls of spinach
2 cups chopped mushrooms
turmeric
red pepper flakes
Now What
cook rice mix
chop potatoes and soak in water for 10 minutes
chop onions. add to skillet on medium heat. little earth balance in skillet
drain potatoes. add turmeric and red pepper flakes to potatoes
add potatoes to skillet
stir mixture and cook for 10 minutes
chop and add bell pepper
chop and add mushrooms
add spinach and stir until spinach shrinks
add rice mixture and stir up
add (or skip) 1/2 cup simmer sauce
stir for 2 minutes
remove from heat and enjoy!

Lentils and wild rice
You’ll Need
1 cup lentils and rice (prepared)
1/2 jar curry
2 handfulls spinach
4 mushrooms
1 red onion
cast iron skillet
earth balance spread
Now What
In cast iron, add a bit of earth balance spread
chop and add onions
cook them onions up
add a few handfuls of spinach
stir it all up
chop and add mushrooms
stir it all up
add lentils and rice to the mixture
add curry
stir it all up
serve and enjoy!

Nothing like a bowl of wholesome veggies, quinoa, and curry to make an evening complete!
You’ll Need
2 stalks of celery
2 carrots
2 handfuls of kale
2 cups of quinoa
1/2 jar of non dairy curry
1 lemon
1 table spoon earth balance spread
Cast iron skillet
Now What
Chop celery, carrots, and kale
Heat up skillet with earth balance spread
Toss in celery and carrots
Simmer until a little brown
Add kale
Simmer and stir
Squeeze lemon on mix
Add quinoa
Add curry
Simmer and stir
Serve it up and squeeze lemon on top!
Enjoy!
As filling as risotto, but even tastier and way healthier.

1 cup black rice (cooked)
1/2 pineapple
1 nectarine
1 pear
1/4 jar non-dairy curry
Now What
chop up fruit
combine with cooked rice in sauce pan
add curry
stir and simmer for 5 minutes

Hardly any food in the house, just goes to remind ourselves, that it’s possible to make a delicious meal with whatever is left over (and not gone bad!) in the kitchen.
Veggie Curry
You’ll Need
1 red onion
1 sweet potato
1 orange pepper
4 carrots
2 cups rice (cooked)

Now What
prepare rice (1 cup rice, 2 cups water, 1 table spoon earth balance)
simmer onions in cast iron
chop sweet potato and add to onions
simmer while you chop carrots
add carrots
chop orange pepper
should simmer for about 20-30 minutes
add cooked rice to cast iron
stir and simmer on low
add jar of non-dairy curry.

simmer for 5-10 minutes on low

You’ll Need
2 frozen bananas (freeze in zip lock bag over night)
a few squares dark chocolate (I like dark mint chocolate!)

Quinoa kale curry ;)
You’ll need
Quinoa
Kale
Indian Curry (jar or homemade) Maya Kaimal is my fav!
Steamer
Now What
Prepare Quinoa - 1 part Quinoa, 2 parts water, simmer for 15 minutes
Steam Kale - 5 minutes
Combine with a few tablespoons of Curry in cast iron skillet. simmer for 5 minutes.
Enjoy!
Spinach with Mango Curry
How To
prepare rice and set aside
add rice and spinach to the onions
cut half an onion and simmer for 20 minutes
cook together for 10 minutes so everything soaks up the flavors.

Hearty + Healthy Lunch
As hearty as potato salad with all the fixins. . but much much healthier!
You’ll Need
Handful of arugula
3 spoonfuls of wild rice
2 stalks celery
6 hot pickle slices, Ricks Picks is my fav
Spoonful of hummus
half a spoonful of curry
mix it up
spread on whole wheat tortilla
eat it up!
Wild Rice with little colored potatoes + celery + spinach
Stuff You’ll Need
Groceries
Wild Rice
1 clove garlic
1/2 onion
olive oil
baby potatoes
2 stalks celery
2 handfulls spinach
couple table spoons of your favorite curry
Hardware
sillet
pot
bowl
left over container (preferably glass!)
Now What
Cook the rice and set aside (1 part rice / 2 part water / boil and then simmer for 50 min)
Chop garlic and onions
warm skillet with some olive oil poured in
cut potatoes into halves or smaller if you have bigger potatoes
sautee garlic and onions for a few minutes
add potatoes
cook on medium until a bit browned
add celery and spinach
add rice
add a couple table spoons of your favorite curry
mix it up in the skillet
Pour into a bowl
Pour the rest into leftover container :)
