Sweet & Savory Mushroom Crunch Lunch
You’ll Need
5 mushrooms
2 stalks celery
1/2 cup lentils and rice mix
1 avocado
1 handful mixed greens
Now What
Prepare lentils and rice mix
Chop veggies
Dressing
1 table spoon Dijon
2 table spoons balsamic
2 shakes your favorite hot sauce
Stir until smooth
Now What
Mix everything together

Mung Bean Curry
You’ll Need
Mung Beans
1 part mung, 3 part water, boil for 5 minutes
1/2 red onion
1 orange pepper
1 green pepper
2 stalks celery
1 table spoon Earth Balance
1/2 jar Madras Curry
cast iron skillet
Now What
cook up the mung and set aside
stick a table spoon vegan butter spread into cast iron
chop and add onion
chop and add celery and peppers
simmer for 5-10 minutes - stir often
add mung
add curry (optional) great without curry too!

Home made veggie + soba noodle soup!
You’ll Need
Soba noodles
Half red onion
Few cloves of garlic
Bit of ginger
1 sweet potato
2 stalks celery
1 handful of kale
NOW WHAT
boil water / toss in soba / cook for 8 minutes / drain / set aside
chop onion and garlic
saute onion and garlic in pot w/ olive oil
chop sweet potato / add to mix
simmer for 8 minutes
add water
chop celery & kale and add to mix
add chopped ginger
simmer for 30 minutes
add noodles

Wild Rice with little colored potatoes + celery + spinach
Stuff You’ll Need
Groceries
Wild Rice
1 clove garlic
1/2 onion
olive oil
baby potatoes
2 stalks celery
2 handfulls spinach
couple table spoons of your favorite curry
Hardware
sillet
pot
bowl
left over container (preferably glass!)
Now What
Cook the rice and set aside (1 part rice / 2 part water / boil and then simmer for 50 min)
Chop garlic and onions
warm skillet with some olive oil poured in
cut potatoes into halves or smaller if you have bigger potatoes
sautee garlic and onions for a few minutes
add potatoes
cook on medium until a bit browned
add celery and spinach
add rice
add a couple table spoons of your favorite curry
mix it up in the skillet
Pour into a bowl
Pour the rest into leftover container :)
