You’ll Need
Handful arugula
a few olives
1 yellow pepper
1 table spoon hummus
Now What
Chop veggies
Spread hummus on wrap
Combine and mix salad
Add to wrap
Enjoy the leftovers on the side :)

Chop veggies

Orange Avocado Arugula Surprise

Orange Avocado Arugula Surprise

I like to add “Surprise” at the end of a lot of these meals because it’s fun, but it’s also surprising how delicious these super crazy healthy meals actually are. I mean really surprising! Try it out and let me know how you like it!

You’ll Need
2 handfulls of arugula
1 orange
1 avocado
1/2 cup pine nuts
Earth Balance spread
Sea salt

Now What
Heat cast iron or skillet
Add a bit of earth balance spread to skillet
Toast pine nuts in skillet
Peel orange, cut half in small slices
Slice avocado
Add avocado and orange slices to arugula
Squeeze the rest of the orange over the salad
Add toasted pine nuts (toast in skillet until they are a little brown)

Add a pinch of sea salt

enjoy!

Arugula Avocado Pear

This salad totally rocks! Sweet, savory, and satisfying!

You’ll Need
2 handfuls of Arugula
1 Pear
1 Avocado
1/2 cap full of olive oil
Dash of sea salt. (Get the good stuff!)

Now What
Chop avocado and pear
toss with arugula
drizzle olive oil and sea salt

Enjoy!

Strawberry Arugula Surprise

You’re going to flip over this meal!

You’ll need
2 handfulls organic wild arugula
1 lime
1 orange pepper
1 apple
5 strawberries

Now What
Slice apples
Slice strawberries
Slice pepper
Mix with arugula
Squeeze lime onto mixture
Mix with your hands

Enjoy!


This perfect lunch salad is supper yummy, satisfying, and will give you loads of energy to last through the afternoon.
You might think arugula is too bitter to not be loaded up with salad dressing, but don’t worry, this salad comes out super sweet and super good!  It’s the yellow pepper, olives, lemon, and rice combo that cut the bitter and make it savory!
You’ll need
1/2 cup black rice (prepared + chilled in fridge)
1 yellow pepper
A few olives
Small handful of pine nuts
2 handfuls of wild arugula
1/2 lemon
Now What
Put the rice in bowl
Add arugula
Chop yellow pepper + add to mix
Add olives and pine nuts
Add a bit of juice from olives (check jar they came in)
Squeeze 1/2 lemon on salad
Mix it up!
Enjoy!

What would Wonder Woman Eat!

Sauteed greens with Mashed garlic sweet potatoes.

For Greens

little olive oil in skillet

heat it up

add 1/2 red onion chopped

sautee for a few minutes

add handful of kale / handful of arugula

simmer until it shrinks

cut 5 cherry tomatoes in half / add to mix

squeeze half lemon 

stir

simmer

enjoy!
