1/2 cup mung beans
2 cups broccoli
1 heirloom tomato
2 table spoons salsa
1/2 hot pepper
Prepare mung beans - 1 part mung / 2 part water, bring to boil and simmer for 5 minutes
Melt earth balance in cast iron skillet
Simmer all veggies in cast iron
add mung and salsa
simmer and stir constantly for 5 minutes
Remove from heat and enjoy!
