Acorn Squash Soup

You’ll Need

Acorn Squash

1/2 red onion

2 cups water

1/2 cup coconut milk

Now What

Roast whole squash in oven for 40 minutes

Remove squash. Cut and peel of skin.

Dice onion, simmer with a little olive oil

Add squash to pot with water

Cover and simmer for 20 minutes

Add spices (red pepper flakes, sea salt, chilly powder)

Simmer for 10 minutes

Add coconut milk

Cover and simmer for 10 minutes

Vitamix the soup and enjoy!

Top with sesame seeds and dried cranberries
