Mmmmmm all veggies in my soup - soup! So good! 

You’ll Need

Whatever veggies you have in your kitchen. I used

handful of kale

2 sweet potatoes (boil them up)

2 stalks celery

2 carrots

1 onion

2 cloves garlic

Now What 

Chop everything up + boil potatoes

little olive oil in pan, chop and simmer onions. add garlic a few minutes later

add veggies and 2 cups water or veggie stock

If you have more veggies make sure to cover with water

add spices. I like red pepper flakes. Lots of them!

simmer down for 20 - 30 minutes

add 1/4 can coconut milk (optional makes creamier soup)

simmer down for 10 minutes

Vitamix it up and enjoy!

Can eat without blending also if you prefer a little chunkier veggies in your soup!
